This grilled salmon recipe is one of the easiest.1/2 cup real maple syrup1/2 cup soy sauce1 teaspon garlic-shallot puree or 1 clove chopped garlicIn a large casserole dish, pour the marinade over the salmon and turn after 15 minutes and marinate another 15 minutes.Preheat grill to high. Spray with cooking spray. Grill a few minutes on each side. Brush with marinade while grilling. Look for the opaque juices running from the fish. Its a good indication that the fish is done.

The skin does provide a barrier for drying out. But keep in mind that over cooking is what ultimately kills a good piece of fish.

I notice when you cook salmon with skin on ,it keeps the salmon from drying out. Then I peel it off and feed it to the cat.

As you can see in the video the tranches are skinless. You can leave the skin on if you prefer. Some people love the crispy cooked skin of salmon.
