The skin does provide a barrier for drying out. But keep in mind that over cooking is what ultimately kills a good piece of fish.

I notice when you cook salmon with skin on ,it keeps the salmon from drying out. Then I peel it off and feed it to the cat.

As you can see in the video the tranches are skinless. You can leave the skin on if you prefer. Some people love the crispy cooked skin of salmon.
