Hello Lori. Usually, it's better to cook your meat this way: 200F - 9 hours 250F - 6 hours 300F - 3 hours.Put 1 enveloppe of dry onion soup on top.Cover the meat with aluminium paper,tightly.THAT'S ALL. Eventually you may add salt, pepper, carrots, onions, dry red wine etc.BUT beef/ dry onion soup/ aluminium paper never fails. Good luck.

Can you help me? I think I am about to ruin another roast. It is a 2.2 Lb Prime Chuck Roast, I bought it from Gelsons.(An expensive store) I browned the outside in a skillet first, now I have cooked it low in the oven for 3 hours at 200 degrees. It has water, seasonings, garlic and kitchen bouquet. I can't even slice at all it is too tough. I put it back in the oven hoping I can cook it enough to fall apart. Should I tried to move it over to a crock pot? Please advise.ThanksLori

oh and what is good is the crock pot bag thing where you put your roast in a bag it makes it so tender :)
